Just like the ovens, the sheets are an important part of the process and because of this, you have to choose the right ones. These sheets are made out of different materials. But today, most of the sheets are made out of different types of metal. This is because they do not burned or get affected by heat. But they could still make use of the temperature to cook what is being placed in the sheet. If you want to start baking, you need to make sure that you have the right sheets so that your first try would not be so much of a failure. It would also be better if you purchase three trays. This would make the baking process continuous. While you have one on the oven, the other one could be cooling down as well. And you can prepare for the next batch on the other one.

The first tip to choosing one is going for the heavy trays with a duller finished. This is more durable and is said to cook more evenly. It might be expensive at first, but you will save more moving forward.

According to experts, it is better to use the ones with the low sides. In fact, if you have no sides or rims at all then you should make use of these. The high sides will keep every piece to brown and get cooked evenly which can present a problem once it is done. If you already have high sides for your sheets, then you can turn it over and make use of the bottom part as the cooking space.

You need to remember that you still need to have a space for it to expand. The dough will still grow so it needs to have more space. And it will mean that you have to make use of a bigger space for them so that you can cook more as well. Just make sure that it does not exceed the capacity of the ovens.

As a beginner, you will have to encounter various types of sheets. You might easily get confused so you have to know which ones you should not use. It should not have a darker color since this would cause more burns and it is the usual reason why cookies become over browned.

This is also the same for the shiny ones. You have to be careful not to choose them the reflection would increase the temperature. You cannot predict the time that it would be cooked. Since the temperature is increased, it would likely be burned. You have to avoid this if you do not want to have this result.
