Use softened butter instead of melted butter when you are creaming sugar and butter for cookies. If you do end up having melted butter, place it in the freezer to help it harden. You can also put the dough in the refrigerator once you are done kneading it. You can prevent cookies from spreading out too much by using cooler dough.

To avoid a greasy mess when reheating dishes that include oil, place them in the oven instead of using the microwave. Microwave radiation heats oil faster than the rest of the leftovers, which means the oil starts separating from all other ingredients involved. Reheating foods in the oven allows everything to heat more consistently, keeping the ingredients blended and the flavors intact.

Use a paper towel to blot moisture off of any ground meat before you put it in the pan to cook. One smart move in the kitchen is to remove the moisture from ground meats. Any moisture left on the meat will be released when the meat is cooked. It will start to sizzle away. This will make the meat steam, instead of sear like you will want it to.

If you want to use skewers when cooking, remember these helpful hints. When using metal skewers, square or twisted skewers hold food better than the round skewers.

Trussing refers to the method of tying a turkey up with string for baking. This keeps the wings and legs close to the bird, promoting a more even cooking. In an un-trussed turkey, the legs and wings can get overdone and the tips can burn by the time the body is fully cooked.

There is an easier way to cut your cinnamon rolls. Sometimes, the cinnamon roll is hard to cut before baking. Place the dough over a piece of thread. Raise the ends of the thread around the sides of the roll until they cross at the top, then quickly pull in opposite directions. Your cinnamon roll slices will be just the right shape.

Get the right kind of potatoes for the recipe you select. Potatoes fall into three categories: waxy, mealy and all-purpose. The mealy variety is best for mashed potatoes because of its dryer texture. Russet potatoes are common mealy potatoes. Yukon gold potatoes are designated all-purpose, and work fine for any type of dish. Waxy potatoes are great for steaming or boiling because they keep their shape well when heated. Regular white or red potatoes are the most common waxy varieties.

When you add seasoning to your meats, test a little bit before you cook the whole thing. Certain foods require special care when seasoning. Hamburgers, meatloaf and meatballs are examples of foods that need to be carefully seasoned. Season it mildly before you make the entire meal. First, make a little patty out of it and cook that first. After you do this you can either completely cook it or add more seasoning as you see fit.

Try experimenting with saffron if you want to try new spices. Saffron will add an incomparable, upbeat flavor to your dish. Saffron is a great ancient spice that is still quite delightful. It is the most treasured and expensive spice.
