It's Not Just Easy Lentil Soup That You Can Make

By Deborah Myers

High in all the B vitamins, and many minerals such as iron and more, lentils make a most nutritional part of a person's diet. Many consider it almost perfect, due to the nutritional it provides. In addition, it is very low-cost for those on a tight budget. Nutritionists believe it can hardly be beat. It is not just for an easy lentil soup, either. Lentils can be used in many ways.

A family of six to eight can be served for under ten dollars if care is taken in selecting ingredients to go with the lentil. All the family can enjoy this meal by choosing ingredients that is agreeable to all the family members. With the range of ingredients that blend well with them, it is easy to pick everyone's favorite.

The types of soups that can be made with lentils are numerous. You can make it spicy, cool and creamy, smooth and creamy, full of chunks of vegetables, and clear if that is your wish. With such a variety of types, there should be something to please every taste.

Lentils, however, are not just for soup. There are a number of more substantial dishes you can prepare with them. Being full of fiber, protein, and other valuable nutrients, it is easy to use them as a substitute for meats in many dishes. They are a delicious and inexpensive protein for those on a limited budget.

A good way to make lentils appealing to the whole family is in lentil bowls. Just combine them with whatever vegetables you wish, toss in a hefty serving, and add whatever dressing you prefer. You can vary the dressing to please every family member. Depending on the dressing, you can give the bowl an ethnic taste as well. Add an egg, goat cheese and potatoes to make it a breakfast bowl. Omit the egg and cheese if you want to make it vegan.

If you are a fan of Mexican food, make a roasted cauliflower and lentil taco. Just add the lentils to a flour taco, add the cauliflower, and any toppings you normally put on a taco. Top with Greek yogurt chipotle sauce, and other toppings as desired. A creamy avocado sauce gives less heat, but is just as creamy.

Lentils make a very beautiful salad as well. Add cooked lentils and fried Halloumi to a bowl of greens, such as spinach or arugula. This briny cheese made of goat and sheep milk is a wonderful, firm white cheese. Top with zucchini, sliced very thinly, and roasted heirloom tomatoes, sprinkle with a few micro-greens for a wonderfully healthy salad.

Shepherds pie is always a hearty favorite, and even if you are vegan, you can enjoy it with lentils. Stir fry some mushrooms with spicy lentils, add vegetables of your choice, and you have a hearty filing. Top it with mashed sweet potatoes and add a crumb topping. Add spices to your taste. With a little creativity, you can come up with many dishes. You can experiment and discard any you don't like, as lentils are so cheap.
