They are all slow-cooked and often smoked over specialty wood chips for a distinctive and lasting flavor. The result is meat so tender that you can cut it with a fork. Many off-the-beaten-path venues are very well-known and popular with local residents. When traveling through the cities and towns, ask the locals where the best barbecue fare is located.

It will not be a disappointing experience and absolutely no one will go home with an empty stomach. Take home enough meat for later in the day or the next day - these items are wonderful leftovers to enjoy as sandwiches or between-meals snacks.
