Regardless of variety and origin, the secret of good quality blends is always in roasting. Most beans types have to be roasted on 200 degrees, very carefully. After that, beans have to be air cooled. These blends usually keep their aroma and taste for limited time only, and this is the main reason for buying freshly roasted beans whenever you can, and to grind them right before brewing.

Arabica is grown in many parts of the world today. Some special types have specific characteristics, for example the ones grown in Java and Sumatra. They have really well-rounded aroma and taste, and especially low acidity. On the other hand, the beans grown in Central America have much higher acidity. Both varieties are used in different blends.

Mild and aromatic varieties grown in Jamaica, Guatemalan Antigua and Costa Rica have characteristically sweet, really pleasant aroma and taste. Jamaican Blue Mountain is one of the most popular and appreciated coffees, and it is often used for preparing the perfect espresso. The perfect espresso should have beautiful, mild and rounded taste, sweet aroma and light brown, rich and creamy foam, with dark brown stripes on it.
